Reading recipes in French

Learn French vocabulary for reading a French recipe, including cooking instructions, quantities, time, and heat.

French recipes follow a predictable structure. The ingredients tell you what you need, and the instructions tell you what to do, usually with a verb near the beginning of each step.

The two recipes below show how cooking verbs, quantities, time, and heat work together. You do not need to understand every word to follow the main instructions.

Omelette au fromage

Start with a simple omelette made with eggs and grated cheese.

Ingrédients

  • 3 œufs
  • 30 g de fromage râpé
  • 1 cuillère à soupe de beurre
  • une pincée de sel
  • une pincée de poivre

Préparation

  1. Cassez les œufs dans un bol.
  2. Battez bien les œufs.
  3. Ajoutez le fromage râpé, le sel et le poivre. Mélangez bien.
  4. Faites chauffer le beurre dans une poêle à feu moyen.
  5. Versez les œufs dans la poêle.
  6. Faites cuire pendant environ 3 minutes.
  7. Pliez l'omelette et continuez la cuisson pendant 1 à 2 minutes.
  8. Servez chaud.

Soupe de légumes

The second recipe uses some of the same patterns with a different set of cooking actions.

Ingrédients

  • 2 carottes
  • 2 pommes de terre
  • 1 oignon
  • 1 gousse d'ail
  • 1 litre d'eau
  • 1 cuillère à soupe d'huile
  • du sel
  • du poivre

Préparation

  1. Épluchez les carottes et les pommes de terre.
  2. Coupez les légumes en petits morceaux.
  3. Hachez l'oignon et l'ail.
  4. Faites chauffer l'huile dans une casserole.
  5. Ajoutez l'oignon et l'ail. Faites cuire doucement pendant quelques minutes.
  6. Ajoutez les carottes et les pommes de terre.
  7. Versez l'eau dans la casserole.
  8. Portez à ébullition, puis baissez le feu.

Quantities and measurements

Recipes express amounts in several ways. You may see a weight or volume, a spoonful or pinch, or the number of individual ingredients:

quelques a few / some

Many quantities are followed by de and the ingredient:

  • 30 g de fromage
  • une cuillère à soupe de beurre
  • une pincée de sel
  • un litre d'eau

Time and heat

After you find the action, look for information about how long to do it and how much heat to use:

French English
pendant for / during
environ about / approximately
pendant quelques minutes for a few minutes
à feu moyen over medium heat
doucement gently
porter à ébullition bring to a boil
baisser le feu lower the heat
mijoter simmer

These pieces combine with the cooking action. Faites cuire pendant environ 3 minutes tells you to cook for about three minutes. Laissez mijoter pendant environ 25 minutes tells you to let something simmer for about 25 minutes.

Heat may also appear as part of the instruction. À feu moyen means over medium heat, while baissez le feu tells you to lower the heat.

Following the order of a recipe

Recipes also use words that tell you when one action happens in relation to another:

avant de before
après after
pendant during
jusqu'à until

In the soup recipe, Portez à ébullition, puis baissez le feu gives you two actions in sequence: bring it to a boil, then lower the heat.

When you encounter words such as puis or ensuite, look for the next action. Expressions with avant de, après, or jusqu'à can give you more information about when that action should happen.

From learning to practice

You do not need to understand every word in a recipe. Find the action first, then look for the ingredient and any information about time or heat. In Laissez mijoter pendant environ 25 minutes, the essential information is the action, mijoter, and the time, environ 25 minutes. This approach can help you follow a recipe even when some of the French is unfamiliar.
